Texas Roadhouse rolls have become almost as recognizable as the steakhouse chain itself, thanks in part to their soft texture and honey cinnamon butter. The restaurant promotes the rolls as fresh-baked bread, and its website says employees bake them every five minutes. Because of that reputation, a College Station, Texas, couple took a closer look when their latest batch seemed not quite right.
TikTok creator Alannah Courtney (@acourtneyyy) recently shared a video from a Texas Roadhouse visit. In the post, she showed viewers one of the rolls served at the restaurant. The clip quickly drew attention to its appearance and texture, with nearly 800,000 views as of publication.
Courtney’s text overlay delivered the line: “Texas Michelle Roadhouse. I KNOW you are not out here serving us the frozen rolls because WHAT IS THAT!?”
Courtney’s husband talked to the waitress.
After noticing, Courtney said her husband asked the waitress if the rolls were frozen. The waitress responded that the restaurant baked them fresh. Courtney said the roll did not taste the same as the Texas Roadhouse rolls they normally receive.
The question about frozen rolls has a straightforward answer, at least according to Texas Roadhouse’s own description of its preparation process. Texas Roadhouse states that its bakers make yeast rolls from scratch every day and bake them fresh every five minutes before serving them with honey cinnamon butter.
The company’s annual report also describes restaurants with display-baking areas where customers can see fresh-baked yeast rolls being prepared. That does not explain why Courtney’s roll looked or tasted different, however.
Could be a proofing issue, one comment said.
One commenter who identified themselves as a former baker offered a possible explanation without claiming to know what happened at the College Station restaurant. The commenter said the rolls aren’t frozen and described how employees make, cut, proof, and bake them at the restaurant.
The commenter suggested that differences in size or texture could result from proofing issues or from employees handling large workloads while preparing other menu items.
The frozen-roll question has surfaced online before. Texas Roadhouse does sell frozen versions of its rolls for customers to bake at home during the holiday season. In 2023, videos about buying the rolls for Thanksgiving circulated widely on TikTok, giving fans a way to recreate the restaurant’s bread at home.
At the restaurants themselves, however, Texas Roadhouse still says employees make the rolls from scratch and bake them fresh. In perhaps a more serious matter, the chain recently denied viral allegations that white servers spit in Black customers’ food.
